Zen Basil Seed Yogurt with Fruit and Granola
Zen Basil Seeds are PACKED with fiber…
coming in at 15g per serving plus all kinds of other health benefits that really take your yogurt to the next level. What I love most about this is you can easily prep it in advance for the next morning so it’s a quick grab when you’re rushing out the door to work, with your kids, etc. Keep reading for the how to!
Ingredients:
2 tbsp Zen Basil Seeds
½ Cup Water
¾ Cup greek yogurt (or yogurt of choice - I’d go for plain so there’s no added sugars)
2 tsp honey (bonus if it’s local!)
½ cup Fruit of choice - when I have time, I LOVE to take frozen mango with a splash of water in a pot. As it softens, mash it up with a spoon or my favorite kitchen tool so it becomes like a compote. This takes probably 2 minutes and really adds flavor/dimension to the dish! Chopped fruit is good too if in a rush!
1/3-1/2 cup Granola of choice - I love Healing Home Foods
Method:
Mix Zen Basil Seeds with water and let them soak for 5 minutes. They will start to swell and become gel like.
Mix in the yogurt with the seed mixture until well combined.
Drizzle with honey and a slight sprinkle of sea salt
Prepare fruit as you like and spread all over yogurt.
Top with granola of choice
I hope you enjoy this as much as I do! This has been a go to for breakfast on the go with my son on the weekends for baseball season and busy week day mornings. If you make it and love it, tag me on Instagram @AshleyPattenPilates and/or comment below!
