Chocolate Chip Granola Bars
Ingredients:
1/2 cup honey
1 tsp vanilla extract
1 tbsp coconut oil, melted
2 cups rolled oats (glyphosate free if possible, I love this brand)
1 cup unsweetened coconut flakes
1 tsp cinnamon
1/2 tsp sea salt
1/2 cup roughly chopped walnuts
1/2 cup chocolate chips - I love these mini ones as they spread out more ;)
1 tbsp ground flax seed
1 tpsp chia seeds
1 tbsp sunflower seeds (if you can find sprouted they will be even more nutritious!)
Method:
Preheat oven to 300 degrees.
Line a small baking sheet pan (9x13 inch) with parchment paper. Spray lightly with avocado oil or lightly grease with coconut oil.
Warm the honey, coconut oil, and vanilla in a small sauce pan. Once boiling, reduce and simmer for 5 minutes. Remove from the heat.
While the mixture slightly cools, place everything else except for the chocolate chips into a large mixing bowl. Stir it all together and then pour cooled liquid over and mix until the dry ingredients are completely covered by the wet.
Mix in chocolate chips last so they don’t melt.
Spread the granola mixture onto the pan evenly packing it lightly down.
Place in the oven for 20-25 minutes until it’s just golden in color. Keep an eye on them so they don’t get too brown and become hard.
Remove from heat and allow to cool completely. Cut into squares, enjoy, and store!
