Ice Cream Brownie Bars
Ingredients:
1 box Simple Mills Brownie Mix (or whatever mix you have on hand and love!)
1 pint of your favorite ice cream. I love to use the mint chip by Van Leeuewen. They have delicious flavors and use high quality ingredients with no fillers. Pick whichever flavor you like!
Method:
Line an 8x8 baking dish with a piece of parchment paper.
Prepare your brownies as per the directions and bake them in your prepared baking dish.
Let them cool completely and then using your fingers/fist press the brownies firmly down to pack them tight.
Place them in the freezer to freeze for at least 2 hours or longer.
Pull out ice cream and let it defrost for about 30 minutes so it’s very soft but not melted.
Use a spatula to smooth an even layer of the ice cream all over the brownies.
Place back in freezer and let them freeze for at least 2 hours or longer.
Pull them out using the sides of the parchment paper and cut into squares 3 or 4 per row depending on the size you want them to be.
Store them in an airtight container in the freezer and enjoy within a week so they don’t get freezer burn.
