Pickled Red Onions
Ingredients:
2 small-medium red onions sliced thin on a mandolin
1 cup apple cider vinegar
1 cup water
3 tbsp maple syrup
3 tsp sea salt
2 crushed garlic cloves
pinch of red pepper flakes or black peppercorns - pick the flavor profile you’re going for!
a large jar about 1 liter in size or 2 small jars
Method:
Place all of the ingredients in a small sauce pan and bring to a boil. Let them simmer for 2-3 minutes while the salt disolves
Meanwhile, thinly slice the red onions with a mandolin and crush the garlic cloves
Place the onions, garlic, and flavorings of your choice in a large jar or 2 small jars.
Pour the brine over and let it cool for an hour or until it’s at room temperature.
Store in the fridge for 2-3 weeks unless eaten sooner!
