Some Sweets for my Sweet

My son is turning 3 in less than a week, I can’t believe it! Over the weekend we had a little party for a few of his friends at his favorite spot - Tiny Tauk. I got my creative juices flowing and made all of the desserts. They were delicious, low in sugar, gluten free, dairy free and rather delicious! Keep scrolling for the details and recipes.

Construction Site Cake

This cake was gluten free, dairy free and very delicious. To save more time for decorating I used Bob’s Red Mill Chocolate Cake Mix (you’ll need two or even three bags to make a 3 tier cake - I used two as we weren’t too big of a group) and Simple Mill’s Chocolate Frosting.

I used these 3 tier silicone baking dishes. After baking per the instructions I let them cool and used a biscuit cutter to cut a hole through every layer but the top.

Worms in Dirt

I used this NYT Cooking Oat Milk Pudding Recipe to keep it dairy free. To keep the chocolate clean and low sugar I used this Hu Kitchen Plain Chocolate Bar (you need 1.5 bars per batch because of the high cocoa content). I made it the night before the party so the pudding had a lot of time to cool.

Don’t Forget the Pizza!

It wouldn’t have been a kid’s birthday without pizza. We love the delicious pies from our friends at Blade and Salt. I am all about balance - pizza plus healthier desserts is definitely speaking my language!

The final touches

To really hone in on the truck theme, I chose construction truck everything for the napkins, plates and cups. I also opted for a nice jar of lemon water over plastic bottled water to try to balance out some of the waste from all the disposable goods.

A Surprise Inside and Outside

I then frosted each layer one by one and stacked the holes in line. I filled it to the top with Little Secret’s Milk Chocolate Candies (no artificial colors, junk, etc in this candy!). Then finished the top piece to finish it all off.

To create the “dirt” for the construction site I used Siete Foods Mexican Chocolate Cookies, crumbled them as much as possible and surrounded the whole cake with them.

To finish I bought this Construction Site Cake Topping Set and it was literally the “icing on the cake”!

So What’s it Made Of?

Oreo’s are literally chemically engineered so obviously I didn’t use those. Instead I used Simple Mills Brownie Bites - I crushed them up well and sprinkled on top. For the worms, I used Smart Sweets Gummy Worms. They are low sugar but definitely still sweet enough! And the bonus was the “shovel spoons” that came with my Construction Cake topper kit so they were the perfect compliment.

Some of the fun

For an activity to get all of the toddler boys energy out included a pinata filled with all kinds of delicious and “cleaner” type candy. Aside from Little Secret’s I also really like Unreal Candy.
