Spiced Candied Pecans

I LOVE a candied nut

They can make your salad SO much better with a little sweet crunch and only a few go a long way. These are easy to make, are great for the holidays and I love having them around to toss into a salad. I always send a big container to work with my husband to munch on at work. These are easy and don’t take much time.

Ingredients:

  • 3 cups pecans

  • 1/3 cup coconut sugar

  • 1/3 cup orange juice

  • 1 tsp orange zest

  • 2 tbsp finely chopped rosemary

  • 1.5 tsp fine sea salt

  • 2 tbsp egg whites (about 1 egg’s worth)

Method:

  • preheat oven to 350 degrees and line a baking sheet with a silpat

  • beat egg whites in a mixing bowl until frothy

  • add the coconut sugar, orange juice, orange zest, rosemary, sea salt and whisk together

  • add in the pecans and mix well until it seems they’re all covered

  • spread evenly on the baking sheet and bake on the middle shelf for 15 minutes, toss them once and bake for another 10 - make sure to check them so they don’t burn towards the end.

  • take them out and let them cool completely.

  • you can move the silpat around the break them up/unstick them. store in an airtight container until they’re gone!
