Super Veggie and Protein Packed Tacos
Ingredients:
Taco filling:
1 lb ground meat of your choice
1 bell pepper small diced
1/2 white or yellow onion small diced
2 cups chopped greens (whatever you have on hand, spinach, kale, etc.)
1 package Siete Taco Seasoning (I love these packs because it saves time and effort. I buy them in bulk and keep them in the fridge for easy meals) or season as you like (salt/pepper, cumin, paprika, cayenne, garlic, onion, etc.)
1 package of tortillas. We love Siete Foods Cassava as they’re gluten and grain free
avocado oil/spray
Optional toppings:
shredded cheese of choice - we love A2 raw cheddar from the farmers market as it’s easier to digest

pickled red onions
“quick” guacamole: smash together one avocado with juice of 1 lime and a good sprinkle of flakey sea salt
roughly chopped cilantro
hot sauce
limes to squeeze
Method:
I use two pants at once so I can whip this meal up faster. The trade off is 2 pants to clean at the end instead of one.
Prep your veggies and toppings. I like to put each topping in a little bowl so it’s easy for everyone to make up their own tacos. Plus it looks nice :)
Heat two pans on the stovetop, once warm spray one with avocado oil for the veggies. The pan for the meat doesn’t need oil.
Once the oil is shimmering, add the onions and bell pepper. Season with salt and pepper
Add the ground meat to the other pan and break up with a spatula so it cooks evenly.
Saute the veggies until they’re lightly browned and softened, about 5/6 minutes.
Add the chopped greens and saute until wilted, about 2 minutes.
Add the ground meat to the veggies once it’s cooked through. You can drain any excess oil if you’d like, typically with beef you will need to with turkey/chicken you won’t. A slotted spoon works well to get meat out and then drain.
Add the Siete Taco Seasoning with 1/3 cup of water. Mix and warm it all together, about 2 minutes. Turn off the heat and cover so it stays warm while you put everything else together.
Wipe the other pan out and add the tortillas in a stack. Turn the heat on low and cover. After a minute or 2, flip the stack over and heat again for about another 2 minutes.
Dampen a tea towl or cloth napkin with warm water (it should not feel “wet”) and wrap the tortillas in it so they stay warm/soft.
Set your table with your toppings, meat/veggies, tortillas, and place settings. Then enjoy!
