The Breakfast Taco Edit

I love breakfast tacos,

so much. Most weekends I make them with an extra foamy cappuccino and enjoy every minute of it. What I love most about making tacos aside from the fact that they taste so good is that there are endless options on how to prepare them and you can tweak them based on what’s in your fridge. These are gluten free, dairy free and many have lots of veggies which is a great way to stay full and keep your blood sugar balanced. Keep reading for some of the tastiest combos I’ve made, none of which take a long time but taste so delicious.

Nice and creamy

Quick and Easy

Extra Greens

  • Layered arugula (or spinach)

  • Poached Eggs

  • Quick pico of chopped tomatoes, red onion, jalapenos, cilantro and lime juice (Make it and use all week long!)

  • Avocado slice

  • Hot sauce

  • Served on warmed tortillas.

Super Scramble

  • Saute greens, red onion, tomatoes, garlic til soft then add 2 eggs and scramble up.

  • Serve over smashed avocado.

  • All inside warmed tortillas.

  • Top with hot sauce.

Fancy Style Poached Eggs

  • Smash avocado with lime juice and sea salt.

  • Poach eggs and place over avocado.

  • Top with mandolin sliced jalepenos, red onion, and cherry tomatoes.

  • Serve in warmed tortillas.

  • Top with flakey sea salt.

Super Veg With Poached Eggs

  • If you’ve made my avocado crema and have some leftover, this is your moment to use it at breakfast time!

  • Layer some greens such as spinach or arugula.

  • Poach your eggs

  • Top with a quick pico of red onion, jalepenos, tomatoes, lime juice and cilantro.

  • Served in warmed tortillas.

  • Top with sea salt and fresh pepper.

I hope you enjoy these variations as much as I do! They are veggie loaded which I love because I think starting your day off with greens is always a good idea.
