The Ultimate Veggie Loaded Sandwich

Make your sandwich go the extra mile

On super busy days I love a good veggie loaded sandwich for lunch because I can eat it easily, quickly and load it up with lots of good stuff to keep me full and satiated.

Start with bread and a spread

Then, spread on either a dairy free cream cheese (I LOVE Monty’s) or go for a goat/sheep based cheese to keep it easily digestible. Start with your bread of choice. I usually go for a gluten free option to make it low inflammatory. My favorite is the breads from Knead Love Bakery (they ship!). This bread you see here is a sprouted seeded bread from Orwashers (a great bakery in NYC) unfortunately they’ve discontinued the bread which is REALLY unfortunate.

Add some green

Spread on 1/4-1/2 of an avocado on the other slice.

Use a mandolin for super thin cucumbers

Keeping them thin will help you layer them easily and not make the sandwich too bulky.

Use a veggie peeler for thinly sliced carrots

This will also help them layer easily and keep the sandwich tidy.

Add your protein of choice

My go to is wild smoked salmon because it tastes so good on this and packs a lot of protein and nutrients.

Add more greens

Layer whatever you have in your fridge but typically I am a fan of spinach or arugula.

Pack it to go

I love using glass containers because they are much safer than plastic. Put in some mixed greens (or whatever you have) and place the cut sandwich on top.

Add in some dressing

Make an easy dressing with olive oil, red wine vinegar, dijon mustard, plus salt and pepper. I love using leftover Sakara dressing containers when packing my own lunch.
