Toasted Quinoa Peanut Butter Cups
These are so easy!
The best part is you likely have what you need in your kitchen already. They take no more than 10 minutes and are ready in an hour after a short stint in the freezer. Perfect for when you’re in the mood for a sweet treat but don’t have anything on hand. Keep reading for the how to!
Ingredients:
Makes 9 “cups”
1/4 cup raw quinoa
1/2 cup chocolate chips
1/3 cup smooth peanut butter (or nut butter of choice)
1 tbsp coconut oil
Flakey Sea Salt
Method:
line a cupcake pan with 9 silicone liners
heat a pan over medium heat. Once warm, pour in quinoa and toast until they start popping around in the pan - about 3-5 minutes. Watch that it doesn’t burn. Turn off heat and set aside
meanwhile, melt chocolate and coconut oil in a small sauce pan and mix well
add in peanut butter and mix until well combined and there are no clumps
add in quinoa and fully mix
using an ice cream or cookie scoop fill each cup with about 2-3 tbsp of the mixture
sprinkle a little flakey sea salt on each one
place in freezer for at least an hour or even more
serve and enjoy!
