Canned Wild Salmon Salad
I woke up the other morning
And had no idea what to pack for lunch. I was sick of everything I had made lately and needed a change. I also wanted to work with what I had in my kitchen. I remembered I had a random can of wild salmon so I decided to wing it and whipped up this very easy and delicious salmon salad. Great to keep in mind when you’re in a similar situation!
Ingredients:
1 tin canned wild salmon
1/2 avocado
1/4 finely chopped red onion
1-2 tbsp capers chopped
2 tbsp finely chopped dill
1 small lemon juiced plus it’s zest
1 tsp dijon mustard
salt and pepper to taste
Method:
start off putting the avocado, lemon, and zest in a bowl. Mush it up until it’s rather smooth.
add in salmon and use a fork to flake it up.
add in the red onion, capers, dill, dijon mustard and mix together.
add salt and pepper to taste and mix one more time
To serve:
Place a heaping handful of arugula and drizzle with lemon/olive oil. Scoop salmon salad over the top with a sprinkle of sea salt and ground pepper.
Or, toast up 2 slices of bread (I love the seeded gluten free bread from Sixteen Mill lately) scoop the salmon salad on each piece of toast, add a squeeze of lemon and salt and pepper.
Plate veggie slices like celery, bell pepper, and carrots plus crackers to scoop it up - a great meal for on the go! This is a go to choice for me while traveling.
