Chocolate Popsicles

Who doesn’t like a cold treat in the summer?

I love this recipe and have made it the last few summers. It’s dairy free, refinded sugar free, and so good. My son loves them and it’s the perfect compromise when he’s asking for ice cream on the daily.

Ingredients:

  • 1 can full fat cocounut milk - gum free if you can. I love this brand.

  • 1/2 cup cocoa powder

  • 1/3 cup maple syrup

  • 2 tsp vanilla

  • Silicone Popsicle Molds - we love these dinosaur molds. But if that’s not your bag, these work too! This recipe will yield about 2 rounds of the dinosaur molds so you can do 2 batches or make multiple shapes depending on what you have!

Method:

  • Pour all the contents into a blender and blend on high for 1-2 minutes until fully combined.

  • Pour into silicone molds and freeze overnight. If you have kids, using fun shapes like these trucks or dinosaurs is super cute but really they taste the same in whatever shape!
