Clean Out Your Fridge Tuna Salad
The Best Meals Clean Out Your Fridge
I love it when I’m fresh out of ideas with what I should pack for lunch but then I open the fridge, see what I have and create something so good. This is just what I did last week and whipped up the most delicious tuna salad. Keep reading for what I threw in!
Ingredients:
1/2 avocado
Herbs you have on hand, I’ve loved using basil, parsley, and/or cilantro. Chopped - about 1/4 cup.
Juice of 1 lemon or lime (or both!)
1 carrot small diced
1/4 cup small chopped red onion or scallion depending on what you have.
1 stalk celery small diced
1/2 jalapeño small diced
1 can line caught wild tuna, drained
If you have, butter lettuce to serve it over but really any lettuce will do!
Crackers to scoop it with as well - I love Healing Home Foods Fresh Herb Crackers!
Salt and pepper to taste - I used Jennifer Fisher Kitchen Salt and it adds a real good flavor/kick.
Method:
Mash up avocado, citrus and pinch of salt so it becomes rather smooth. This will be your base. Then add in chopped herbs.
Add in side by side each ingredient you have on hand - it’s ok if you don’t have exactly what’s on the list. The beauty of this is you make it work with what you have. Don’t be afraid to branch out!
Mix it all up and add extra citrus, herbs, salt/pepper to taste.
To Serve:
Plate lettuce and scoop tuna salad on top - add crackers on the side. I wrapped up scoops of tuna salad in each butter lettuce leaf and ate it as a little wrap of sorts - was so good! I also scooped it up with crackers.
