Mediterranean Inspired Roasted Fish
I love a fish full of flavor
This is a quick and easy week night dinner that has lots of flavor and little effort. It also utilizes lemons, onions, garlic, olives and capers which many people often have already in the kitchen. I used wild cod but you could use whatever firm white fish you have, try to go for wild caught if you can! Pair this with a salad and crispy smashed potatoes or over orzo and you’ve got dinner finished in under 30 minutes.
Ingredients:
1-2 lbs of cod sliced into 2-4 pieces depending on how many people you’re feeding
1/2 red onion thinly sliced
1 pint baby tomatoes sliced in half
1 cup roughly chopped calvestrano olives
2 tbsp capers
4 cloves garlic thinly sliced
1 tbsp red wine vinegar
4 tbsp olive oil
2 lemons thinly sliced
chopped parsley
salt and pepper to taste
Method:
Preheat your oven to 400 degrees
Line a baking dish with lemon slices
Pat dry fish and season with salt, pepper and 1-2 tbsp olive oil depending on how much fish you’re cooking
Place fish over the lemons in the baking dish
mix together tomatoes, onions, olives, capers, garlic, red wine vinegar, and 2 tbsp olive oil
spoon the mixture over the fish and bake for about 15 minutes
To Serve:
I served this with mixed greens and crispy smashed potatoes. I could also see it being delicious over orzo - I love Jovial’s Grain Free Orzo. In general, I always start my meals with a small salad to help keep my blood sugar balanced - it’s also an easy/quick way to add extra veggies to your meals!
