The Most Refreshing Spring Salad

I love nothing more than a huge salad, let me tell you.

To me, it’s the perfect opportunity to be creative and put lots of delicious flavors together. I’ve been doing this mix on repeat all week and decided I had to share it with you. It’s light, bright, and very refreshing which is perfect for this time of year.

Ingredients:

  • 2-3 handfuls of arugula

  • 1 sliced persian cucumber

  • Handful of roughly chopped mint and parsley

  • Handful of roughly chopped pitted green olives

  • 1/2 sliced avocado

  • 1/4 cup or so sheep’s milk feta

  • small handful pine nuts

  • Protein of choice to top it with. I’ve been doing shredded chicken because that’s what I meal prepped but you could do antyhing!

  • Dressing: I eyeball everything but when I mix an individual portion for that day, I’d say I use about 1 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tsp dijon and salt/pepper.

Method:

  • Add it all to your container or bowl, dress if you’re eating right away or pack up your dressing (I love to reuse the Sakara dressing containers). I do like these glass Weck Jars because they’re long and narrow and fit easily into my bag for work.

  • I love to cut it all up so you get lots of flavor (which this salad is full of!) in each bite.
