Stone Ground Mustard Crusted Salmon

I’ve been eating this for years

and had gotten out of routine of making this and then last week my husband asked if I would and I remembered how good it is! This takes about 2 minutes to prep and then you throw it in the oven. Keep reading and be sure to save this for a quick weeknight dinner.

Ingredients:

  • 2 filets of wild salmon (if possible).

  • 1/4 cup stone ground mustard

  • 2 tbsp finely chopped chives

  • 1 tbsp olive oil

  • salt and pepper

Method:

  • Preheat your oven to 400 degrees.

  • Line a baking sheet with a silpat and place salmon filets evenly apart and pat them dry.

  • In a liquid measuring cup, add the mustard, the chives, olive oil and a good pinch of salt and ground pepper. Mix well.

  • Evenly spread the mustard mixture between the two filets so they’re completely covered.

  • Place them in the oven and bake for 15-18 minutes or until cooked to your liking (I prefer medium).

  • Serve with roast veggies and enjoy!
