My Go To Salad Dressing

I have PTSD

From being served bottled salad dressing as a kid. Hidden Valley, Wishbone, etc. They were all so gross to me and were the only seeming salad option at time. So to say the least, salad was never very appetizing to me. Fast forward a few decades and I now make my own salad dressings each week. They are delicious, easy and full of good for you ingredients. Keep reading for my go to dressing.

I usually eyeball everything and make a batch for a few days. I bring it to the studio so when I make a fresh salad in the morning for work I don’t have to fuss with finding a container for the dressing, etc. You could do the same for at home or your own office! You can also make a smaller serving if you need it for a single serving. I always save jars from mustard, jelly, etc. to repurpose for this very use as you can throw it in the jar, give it a good shake and will be ready to enjoy.

The below will yeild enough for 4 salads or so.

Ingredients:

  • 1/4 cup olive oil (organic and stored in a dark glass bottle if you can!)

  • 1/4 cup apple cidar vinegar

  • 2 tbsp dijon (or stone ground, you can mix it up depending on what you have/are in the mood for!)

  • small splash of water (2ish tbsp)

  • sea salt and fresh ground pepper to taste

  • occasionally I had a spot of honey/hot honey for a little bit of sweet/kick to mix things up depending on what’s in the salad that day!

Method:

  • place all ingredients in a glass jar and shake until completely combined

  • store in the fridge and use as needed
