Summer Peach Salad

I love stone fruit in a salad during the summer.

They add the perfect sweet, juicy-ness that really makes a salad pop. Pair this with fresh herbs and it’s full of flavor, keeping things interesting. This salad combo is great as a side during a summer dinner party, or with added quinoa and protein for a fun weekday lunch. Keep reading for all the goods that make this one up!

This yields about 2 lunch sized servings or a perfect dinner salad for 4. Bring ingredients up or down based on how many you’re looking to serve!

Ingredients:

Salad:

  • 1 peach chopped into 1 inch cubes

  • 1 large tomato chopped into 1 inch cubes or 1/2 cup grape tomatoes cut in half

  • 1 avocado, cubed

  • 1/4 cup red onions cut into half moons

  • 2 oz goat cheese - I LOVE Meredith Dairy

  • 1/4 cup pecans

  • 1 persian cucumber sliced thin

  • handful of basil leaves

  • greens of your choice

  • optional add in: 1 cup quinoa, and/or protein of choice if making this salad into a full meal

Dressing:

  • this is my go to dijon dressing!

  • 1/4 cup olive oil (organic and stored in a dark glass bottle if you can!)

  • 1/4 cup apple cidar vinegar

  • 2 tbsp dijon (or stone ground, you can mix it up depending on what you have/are in the mood for!)

  • small splash of water (2ish tbsp)

  • sea salt and fresh ground pepper to taste

Method:

  • prep all of the ingredients and arrange in a bowl

  • if serving right away, dress the salad with desired amount, if not leave dressing on the side until you’re ready to serve

  • if you’re serving this as a side salad at dinner it’s perfect as is

  • if you’re making this for lunch, I’d add a scoop of quinoa and some shrimp or chicken! This will make it a complete meal.
