Super Easy Lettuce Cups

My latest weeknight dinner obsession is lettuce cups

When I was in LA I ordered these at Goop Kitchen and fell in love. So I went on a hunt to find a recipe and recreate them. The best part is that there is something for everyone on the table and the toppings include gut friendly kimchi. Not to mention, this takes maybe 20 minutes to put together! This is inspired by Nom Nom Paleo’s recipe but I’ve tweaked it a bit to make it more colorful and family friendly. I know you won’t get tired of this one!

Ingredients:

  • 3 tablespoons gluten free Hoisin sauce (I like this brand!)

  • 2 tablespoons coconut aminos (or gf tamari if you don’t have)

  • 1 teaspoon arrowroot powder

  • 1 teaspoon Red Boat Fish Sauce

  • 1 teaspoon rice vinegar or apple cider vinegar

  • ½ teaspoon toasted sesame oil

  • 1 tablespoon avocado oil

  • 1 large shallot minced

  • 3 garlic cloves minced

  • 2 teaspoons minced fresh ginger

  • 1 pound organic ground chicken, turkey, wild baby shrimp or cubed tofu.

To Prepare:

  • In a small bowl, whisk together hoisin sauce, coconut aminos, arrowroot powder, fish sauce, rice vinegar, and sesame oil.

  • Heat a large skillet over medium heat and add the avocado oil when the pan is hot. Add in the minced shallots and cook, stirring frequently, until slightly tender, about 2 to 3 minutes. Add in the garlic and ginger and cook until fragrant, about 30 seconds.

  • Add in your protein of choice and break it up with a spatula ( if neccessary). Cook the protein, stirring frequently, until cooked through, about 6 to 8 minutes.

  • Stir in the sauce. Cook, stirring frequently until the sauce is slightly thickened and bubbly.

To Serve:

  • 2 scallions thinly sliced

  • 1 head butter lettuce separated into leaves

  • Handful roughly chopped cilantro

  • 1/2 cup roughly chopped kimchi

  • 2 thinly sliced mini cucumbers dressed in rice vinegar and a sprinkle of sea salt

  • Mango slices

  • Steamed jasmine rice

  • Limes
