Zucchini Fries

These are a fun finger food

When you’re feeling like a french fry but don’t actually want fries. I put these together this summer when I had a surplus of zucchini from my garden and they’re fun! These are easy to make - keep reading for the how to!

Ingredients:

  • 2 medium sized zucchini sliced into “french fries”

  • 1 egg beaten

  • 3/4 cup pecorino romano

  • 3/4 cup bread crumbs (I love these made from Cauliflower!)

  • 1.5 tsp garlic powder

  • fresh ground pepper

  • flakey sea salt

  • olive oil for drizzling

Method:

  • Preheat your oven to 400 degrees and line a baking sheet with a silpat

  • Beat one egg in a shallow bowl

  • Mix the cheese, bread crumbs, garlic powder and ground pepper together

  • Dredge each “fry” into the egg mixture then the dry mixture coating evenly as you go

  • Evenly space the fries so they bake not steam on the sheet

  • Drizzle them with olive oil

  • Bake for 35-40 minutes until lightly browned/toasted looking. I like to start them for the first 20 minutes on the bottom rack ( the bottom of the oven is always hotter) and then the last 15-20 on the middle rack

  • When you pull them out sprinkle flakey sea salt over them and serve warm
